i haven't done it yet.....but from what i read, freezing is the best method of preserving/keeping squash/zucchini. i think you give it (after chopped how you want it) a quick blanche then freeze. i'll let you know how it goes! my book says freezing is the best method....though you can can....but since it's low-acid you must use a pressure-canner not just a boiling water bath. i have a friend who froze tons of summer squash last year and he seemed to like it.

I don't know - it seems like it would be mushy. Does anyone else know how to save zucchini and squash??

LOVED this! My all time favorite smell is the woods after it rains. Question: Can you and do you freeze squash and zuchinni?
