roasted fennel sounds very nice! How do you make it? I bought some brussels sprouts and I'm going to roast them, then add walnuts, dried cranberries and a mustardy vinagrette. I can't handle any more casseroles either.

:) i sent bryan the link and he said 'that's a nice lookin' blog! hmmmm. i am bringing a veggie to my dad's. i'm thinking i'm going to make butternut squash soup and also roasted fennel with parm. if you have any ideas on those let me know! i have a good soup recipe from cleaning living/cooking?? but it has curry, which patti is allergic to, so i'm going to have to adjust it. we shall see. i tried braising fennel once, but there was to much liquid in it....so for thanksgiving i'm going to stick to roasted. not sure what my family will think, but they need to try new things! i'm sick of casseroles! oh, also, i want to try a spaghetti squash/meat casserole from moosewood another time!

this is one of my favorites! i usually use chicken legs. i made it tonight for amy weaver and bryan mullins and it was a hit! they knew i got it from you:) bryan says it was 'definitely comfort food.' yay! we miss you guys so much!

I often make a recipe similar called 'Tuscan Chicken' - it has a couple of additions. (Because Matthew loves them) I add some baby portabello mushrooms and saute with the tomatoes. And before putting it in the oven add one can of chickpeas. It becomes a really hearty meal in itself - all it needs is a salad.

i'm definitely going to try this....i have some chicken legs in the freezer! yum:) what about rice in there with it? if it were raw would it cook in time.....or quinoa! i just got some and haven't cooked it yet....i guess i could serve it with it. hmmmmm.
